Dan Bavaro from Bavaro’s Pizza is a stickler when it comes to his special pizza ovens – all the way to Napoli.
But he defies the tradition of the pizzaioli, the always male commanders of the pizza oven. Two pizza-over chefs helped us make the Wood Fired Oysters for the chef’s kitchen. Two female pizza chefs – Jamie Kraus and Morgan Lynch.
Wood-fired oysters
12 oysters peeled on the half-shell
½ pound of unsalted butter is softened
½ bunch of parsley, finely chopped
½ tbsp. Chopped garlic
½ c. Reggiano cheese
¼ c. Rendered bacon
Sprinkle the parmesan over the oysters.
Beat up everything except the parmesan in a blender or food processor.
Place a spoonful of butter mixture on the oysters and top with parmesan.
Roast in the oven on a baking sheet until the cheese bubbled and browned just enough.
